Top 10 Anime Shows (Only 1 of the same type of universe. Example: Fullmetal Alchemist vs Fullmetal Alchemist Brotherhood and Dragon Ball Super vs Dragon Ball GT. Base on favorites with description of why on your choices. Honorable mentions optional:

1) Shiki
Mystery with slight horror. Unique art style. 24 episodes for a nice story, ending, and character development. Pacing is consistent. Would like to say more, but it is a mystery anime, so that would be spoilers. The story-line and unique feel make this anime.

2) Death Note
Crime mystery with a scifi factor. 37 episodes with a good story, character development, and ending. Pacing is consistent. The story-line and epic battle of wits make this anime.

3) Code Geass: Lelouch of the Rebellion
Recommend only watching as Adult Swim version due to mature content. Scifi, Mecha, and Action. 52 episodes with great overall story, character development, and really great ending. Pacing is mostly consistent but does have some side school activities going on that the anime could do without. The story-line, battle of wits, and mix of action make this anime.

4) Mushishi
Scifi, mystery, and adventure. 26 episodes with each episode being a different story, excellent character development, and has satisfying ending. Pacing is consistent. The unique each episode is a different adventure with the perfect main character make this anime.

5) Fate/Zero
Action, scifi with a history/myth twist. 25 episodes with a really interesting story, character development, and ending. Pacing is consistent and battle animations are nice. The story-line, action, and history/myth twist make this anime. Fate/Stay Night: Unlimited Blade Works goes well with this anime, but the story-line and character development were more well rounded in these 25 episodes.

6) Angel Beats!
Action, comedy, and scifi. 15 episodes with nice story, character development, and really nice ending. Pacing is consistent and animation is amazing. The story-line, action, character development, and comedy make this anime. The opening is one of the best ever, if not the best.

7) Baccano!
Action and mystery. 16 episodes with amazing character development and good ending. The story is a shattered mystery that comes together nicely. Pacing is consistent. Story-line and amazing character development make this anime.

Cool Kuroko no Basket
Action sport. 52 episodes with amazing animation. Good character development. Story-line and ending are good. Pacing is consistent. The animation and sport action make this anime.

9) Fullmetal Alchemist Brotherhood
Action, adventure, and scifi. 64 episodes with good character development, story-line, and ending. Pacing is consistent. The story-line, action, and character development make this anime. The first Fullmetal Alchemist anime is good, but this Brotherhood has better character development, story-line, and way better action.

10) One Punch Man
Action and comedy. 19 episodes and ongoing. The over the top action and random comedy make this anime. Pacing is consistent and action is everywhere. With the highest class of threat unseen, highest ranked hero unseen, evil cyborg unseen, and buildup battle between main character and highest class A hero; the story-line has potential.

Note) Anime such as Bleach and Naruto had potential to be great, but fillers have crippled them, especially Naruto with the added multiple flashbacks with some being within the same episode and animation going sour. If these animes would have follow the manga instead of sidetracking so often and if Naruto's animation would have stayed great, then both would be major top 10 contenders. As they are, they aren't even close. Dragon Ball Z is an HM along with Dragon Ball Super. DBS's animation is lacking but the story-line is good. DBZ's story-line isn't as good as DBS's but the animation was better. The long power-ups and battles being drawn out in DBZ does hurt it as an anime.
